  • 100 gmSalted Butter(softened to room temperature)
  • 1 tspOregano
  • 1 tspChilli Flakes
  • 2 tbspCoriander Leaves(finely chopped)

The Cheesy Filling

  • ½ cupMozzarella Cheese(shredded, use generously)
  • ¼ cupBoiled Corn(sweet corn works best)
  • ¼ cupCapsicum(finely chopped, any colour)

Mix the Curd Base

  • Take a medium bowl and add ½ cup thick curd, 1 tsp baking powder, ½ tsp baking soda, 1 tsp mix herbs, 1 tsp sugar, and ½ tsp salt.
  • Stir everything together briskly for about 30 seconds until well combined. You should see the mixture turn slightly foamy — that is the baking soda activating with the curd's acidity, which is exactly what you want.

Build and Rest the Dough

  • Place 1 cup wheat flour in a large bowl and pour the curd mixture into it gradually, mixing with your hands or a spoon as you go.
  • Bring it together into a rough dough, then drizzle in 2 tbsp oil and knead for 3 to 4 minutes on medium pressure until the dough feels soft, smooth, and slightly springy — not sticky.
  • Coat the dough lightly with a little oil, cover the bowl with a damp cloth or plate, and let it rest for 15 minutes. This rest time is not optional — it relaxes the gluten and makes rolling much easier.

Make the Herbed Butter

  • While the dough rests, take a small bowl and add 100 gm softened butter, 1 tsp oregano, 1 tsp chilli flakes, and 2 tbsp finely chopped coriander leaves.
  • Mix everything together with a spoon until the herbs are evenly distributed through the butter. The mixture should look flecked with green and red and smell absolutely wonderful. Set it aside.

Roll and Fill the Bread

  • Divide the rested dough into two equal portions. On a lightly floured surface, roll one portion into a flat disc or rectangle roughly the size of a dinner plate, keeping the thickness even at about 4 to 5 mm.
  • Spread a generous layer of the herbed butter across the entire surface of the rolled dough, reaching close to the edges.
  • Scatter ½ cup shredded mozzarella cheese evenly over the butter layer, then add ¼ cup boiled corn and ¼ cup finely chopped capsicum on top. Do not pile the filling too high at the edges or it will leak during baking.

Seal, Top, and Score

  • Roll out the second portion of dough to the same size and carefully place it on top of the filled base, pressing the edges together firmly. Use the blunt back of a knife or your fingertips to press and seal the sides all the way around so no filling escapes.
  • Spread the remaining herbed butter generously across the entire top surface of the assembled bread.
  • Using a sharp knife, make light score cuts across the top at even intervals, going about halfway through the dough. This is important — deep enough scores allow heat to travel through the bread and melt the cheese all the way to the centre.

Bake Until Golden

  • Preheat your oven or OTG to 180 degrees Celsius for 10 minutes before placing the bread inside.
  • Place the assembled bread on a greased baking tray or a tray lined with parchment paper and bake at 180 degrees Celsius for 12 to 15 minutes. Check at the 10-minute mark — the top should turn golden and the edges should look set.
  • The bread is done when the top is a deep golden colour and the kitchen smells of toasted butter and herbs. Remove from the oven and let it rest for 3 minutes before slicing along the score lines. Serve immediately while the cheese is still stretchy.
