Meet the Chatpata Bread Roll. It is crispy on the outside, gooey and cheesy on the inside, and loaded with colourful veggies. It’s the kind of snack that makes your evening chai taste better and makes the kids actually finish their tiffin.

But here is the twist: Have you ever started cooking and realized you are missing the main ingredient? It happens to the best of us! Today, I’m sharing not just this incredible recipe, but also my secret hack to fixing those “oops, empty pantry” moments in minutes (and for just ₹1!).

👉 Pro-Tips for the Perfect Crunch

The “Squeeze” is Key: The most common mistake is leaving too much water in the bread. After dipping the bread slice, press it firmly between your fingers until it is almost flat and dry. If the bread is too wet, it will absorb oil while frying and become soggy!

Ingredients
  

  • 1 cup Paneer cut into small cubes
  • ½ cup Capsicum finely chopped
  • cup Boiled Corn
  • ¼ cup Carrot finely chopped
  • 1 small Tomato optional
  • ½ cup Cheese grated or cubes
  • 1 tbsp Mayonnaise
  • 2 tbsp Fresh Coriander chopped
  • 1 tsp Chilli Flakes
  • 1 tsp Oregano
  • 1 tsp Salt
  • 8 Slices Bread large sandwich bread works best
  • 1 cup Water
  • ½ liter Oil

Instructions
 

  • The Vegetable Prep

    – In a large mixing bowl, bring together all your textures. Add the paneer cubes, crunchy capsicum, sweet boiled corn, and chopped carrots.
    Note: Ensure vegetables are chopped small so they don't poke through the bread while rolling.
  • Making the Creamy Filling

    – Add the Mayonnaise and Cheese. Season this mix with Chilli Flakes, Oregano, and fresh Coriander. Add salt (be careful, cheese and mayo already have salt!).
    – Mix: Stir everything well. The mayo helps bind the veggies so they don't fall apart.
  • The Rolling Technique

    – Take a slice of fresh bread and trim off the brown edges (crust).
    – Dip & Squeeze: Dip the bread in a bowl of water for just 1 second. Immediately take it out and press it hard between your palms to squeeze out all the excess water.
    – Stuff: Place a spoonful of the cheesy filling in the center.
    – Roll: Bring the edges together and roll it between your hands to seal it completely. Shape it into a cylinder or oval. Ensure there are no cracks, or the cheese will leak out!
  • Golden Fry

    – Heat oil in a heavy-bottomed kadhai.
    – Temperature Check: Drop a small piece of bread; if it sizzles and comes up, the oil is ready.
    – Fry: Gently slide the rolls into the hot oil. Fry on medium-high flame.
    – Do not overcrowd the pan. Turn them occasionally until they are evenly golden brown and crispy.
  • Serve & crunch

    – Remove them on a tissue paper to absorb excess oil.
    – Serve hot! The outside will be super crunchy, and the inside will be molten cheesy goodness. Pair it with the Ketch up or spicy Green Chutney.
